ITHM hosts U.S. Potato Innovation Competition

The heat was on, and competitors rose to the challenge in the highly anticipated U.S. Potato Innovation Competition, where the unassuming potato took center stage in a spectacular display of culinary artistry.
Last March 19, at the ARH Function Hall 301-303, chefs and aspiring culinarians transformed the versatile spud into mouthwatering creations—ranging from savory delights to indulgent sweets—demonstrating their skill, innovation, and creativity in every dish.

Leading up to the competition, an “All About Potato” seminar and live cooking demonstration were held nine days before, in collaboration of Far Eastern University Institute of Tourism and Hotel Management with Hapagdiwa and Potatoes USA. Renowned chef Ivory Yat-Vaksman shared her expertise, showcasing recipes that ranged from classic comfort food to bold, contemporary innovations.
“Maraming pwedeng gawing dish sa potato (A variety of dishes can be made from potatoes),” said Chef Ivory.
“The guest speaker was excellent in sharing her expertise in cooking and showing appreciation for potatoes,” said one student.
“Potatoes are more than just a vegetable—you can create something big out of them,” said another.
“I used to have misconceptions about potatoes, but this seminar helped me learn more about their origins, how to cook them, and the many ways to use them,” said one more student.
“Potatoes can be used in creative and innovative ways. They’re versatile, nutritious, and sustainable,” said a fourth.
The main event took place at Kitchen Lab 103 of ARH, where culinary talents battled it out for top honors. Emerging as the overall champion in the Savory Category-Spudtacular Chef Face-Off was Pocholo Miguel Del Birut, whose winning dish captivated the judges with its exceptional flavors and technique.
Among the runners-up were Ariane Antonio, Angel Pitogo, and Bunch Barillo, who also wowed the panel with their inventive potato-based creations.
With passion, precision, and a dash of creativity, this year’s contest proved that the possibilities with potatoes are truly endless.
